RCA Culinary Fundamentals Training
CIA Chef Instructor-led course for food technologists. Each day of this five-day training includes a lecture and discussion, Chef demonstrations, hands-on production, and product evaluation. Topics include: knife skills, mis en place, and fundamental cooking methods such as sauté, stir fry, pan fry, deep fry, grill, broil, roast, and moist heat cooking.
